For a career centered specifically on AI, CMU is the stronger choice because its undergraduate curriculum, research density, and employer connections are unusually aligned with that goal. The main reason to choose UMass Amherst instead would be a meaningfully better financial outcome or a preference for a less intense environment; avoiding large debt can matter more than the marginal prestige advantage when starting an AI career.
