If your question is specifically which school is more established and more widely recognized for economics, UChicago has the clearer edge.

The biggest differentiator is the department itself. Economics at UChicago is central to the university’s identity in a way it is not at WashU, and that shows up in the breadth of upper-level offerings, the intensity of the theory training, and the number of faculty and research centers tied to the field.
